Swahili Food & Drink

Tanzanian plates blend African staples, Indian spice routes, and Arab Gulf influence — especially on Zanzibar. Come hungry.

Main plates

Safari lodges serve international buffets, but towns and local eateries reveal the real pantry.

  • Pilau and biryani — spiced rice dishes, often with meat or fish
  • Ugali — maize porridge staple, eaten with stew or greens
  • Nyama choma — grilled meat, usually goat or beef
  • Chapati — flatbread alongside curries and beans

Coastal and street favourites

Zanzibar and Dar es Salaam excel at seafood and snack culture.

  • Coconut fish curry — coastal classic
  • Zanzibar pizza — stuffed pan-fried 'pizza', more crepe than Italian
  • Mandazi — lightly sweet fried dough
  • Kachumbari — fresh tomato-onion salad
  • Grilled prawns, octopus, and calamari on the islands

Drinks

Tangawizi (ginger beer) refreshes after a hot drive. Fresh coconut water appears wherever palms grow. Coffee from Kilimanjaro and Meru slopes rewards early mornings; ask for local brew rather than imported instant.
